Tasty Tuesday: Chop Suey

We love this recipe and I wanted to share it with you because of it’s ease and simplicity. Here’s what you do:


3 Pounds Chop Suey meat
2 TBSP Oil
8 TBSP Soy Sauce
2 Cups Water
1 Bunch Celery/chopped
1 Onion/chopped
2 TBSP Cornstarch
1/4 Cup Water
Salt & Pepper to taste


Brown meat in oil. Once browned, add soy sauce and 2 C water. Cover loosely and simmer for two (2) minutes. Add chopped celery and onion. Simmer for one and a half (1.5) hours, stirring occasionally. Blend your cornstarch and remaining water in a cup and slowly add to meat mixture, stirring constantly until blended. Season with salt and pepper, serve over rice. (make it easy and use instant rice!)

I am the new Mr. Rogers

Who would have thought that after many years of watching Mr. Rogers Neighborhood, I too would become Mr. Rogers? I realized that today as I woke up, I groggily got out of bed, brushed my teeth and headed downstairs to get the kids ready and off to school. What is the first thing I do when I get down the stairs? Look for my sweater. Now this sweater has seen better days but it is a comfy button down sweater that my husband now has come to hate, which is why I secretly love to wear it. Took off the robe and I slip on the pilled up sweater and the next thing I do, sit on the stairs, take off my slippers and put on my gym shoes. Ok, now I have just transformed myself from a very sleepy mom to a happy go lucky, hurry and get the kids off to school, Mrs. Rogers looking mom. How did that happen? I let out a little laugh and my kids were now wondering why mom is laughing on the stairs. Trying to explain who Mr. Rogers is to kids who have never seen the man or the show is really hard. I think I will have to dig up an old episode of the show so I can show my kids that as soon as he walked in the door, he took his jacket off, put on a sweater, took off his shoes and put on his blue tennis shoes. Then after seeing it they can appreciate how funny I look and will laugh with me when I do the same thing tomorrow! 🙂
